From the pristine shores of the Maldives to the sun-soaked terraces of Tuscany, the farm-to-table movement has taken hold in some of the world’s most stunning destinations. Not so much a trend, it’s become a benchmark for travellers who expect more from their hospitality—they want an honest connection to the place they’re visiting, expressed through food that’s grown, caught, and prepared with care. Basically, they want to know what they’re really eating (and it needs to taste exceptional).

Some of the most innovative and mindful chefs are teaming up with local farmers, fishermen, and producers to bring menus that change with the seasons and celebrate the best each region has to offer. Think morning-picked heirloom veggies, fish pulled fresh from the ocean just hours before your dinner, or fruit harvested at peak ripeness from an orchard nearby. It’s food with a story.

Here are six farm-to-table restaurants setting the standard for how food should be served today…

1. Roots at Patina Maldives

On the dreamy Fari Islands, Roots distills Patina’s conscious living ethos onto the plate. Expect vibrant, plant-forward dishes made with ingredients grown in the island’s organic garden or sourced from local fishermen and farmers. Zero waste isn’t an aspiration here, it’s the rule. Sundown cocktails, ocean views and food that makes you feel good inside and out — barefoot luxury at its best.

RASK Recommends: The menu is ever-changing but if you can get your tastebuds on the wild mushroom skewers, you’ll be in for an absolute treat.

2. Rosewood Castiglion del Bosco, Tuscany

If Tuscany were a table, this is where you’d want to pull up a chair. Within Rosewood’s 5,000-acre estate — all rolling vineyards, olive groves and organic gardens — dining feels like an invitation to savour the season. Osteria La Canonica plates up rustic classics using estate-grown produce and local ingredients, while Campo del Drago adds a refined touch to traditional Tuscan flavours. Long lunches under cypress trees, wine from the estate’s own Brunello vines — this is doing things properly.

3. Food Circle at Sublime Comporta, Portugal

Tucked away on Portugal’s Alentejo coast, Sublime Comporta lives up to its name — nowhere more so than at its Food Circle. This open-air chef’s table, set in the heart of the hotel’s bio garden, hosts up to ten guests who get front-row seats to chefs working over an open fire. Organic, hyper-local and cooked under the stars, it’s an honest, atmospheric experience that changes with the seasons.

4. The Rooster, Antiparos, Greece

The Rooster is an off-grid Cycladic hideaway for those who crave slow living and honest food. The hotel’s working farm and organic kitchen garden supply much of what ends up on your plate — whether it’s a just-picked tomato salad or grilled fish seasoned with wild herbs. Meals here invite you to truly taste the island — simple, soulful and best enjoyed barefoot, with salty hair and zero plans.

RASK Recommends: Join one of their laid-back Sunday suppers on the farm, or book yourself into a cooking class to learn how to bring a taste of Antiparos home.

5. Blue Hill at Stone Barns, New York

About 45 minutes north of Manhattan, this iconic restaurant sets the standard for what farm-to-table really means. Blue Hill sits on a working farm and agricultural research centre, so every dish is a snapshot of what’s thriving in the fields that day — radishes pulled an hour before dinner, heritage grains milled on-site, pastured eggs and grass-fed meats raised with care. The dining room is elegant but never stuffy — more countryside supper with impeccable service.

6. Amangiri, Utah, USA

Tucked into the otherworldly landscape of southern Utah, Amangiri strips luxury dining back to its elemental roots. Menus draw from Native American traditions and the surrounding desert: wild herbs, local lamb, foraged greens and Navajo fry bread under the stars. Here, farm-to-table feels wilder — mindful, untamed and impossibly beautiful.

RASK Recommends: Ask the team to arrange a private desert dinner — think crackling fire pit, local wine and stargazing among Utah’s slot canyons. Unforgettable.
